Manic Monday, Meal Planning Made Simple

I’m not sure about you, but there are some days that seem more busy than others. For us, it used to be Monday. I say used to because I made some changes to make Monday my Me-Day.  However, I still use the same meal planning as it makes a more relaxing day for me.

After the weekend it seems a bit more difficult to pull my son out of bed. Anyone else experience this interesting phenomena 🙂 No matter what, we always seem rushed. While I’m cooking breakfast, he loves cereal while I prefer eggs or something warm I cook, I begin our dinner.

Last week I decided red beans and rice would do it. I pulled out my crock pot, put in the red beans I soaked overnight, poured in some brown rice, chopped onion, my favorite seasonings plus some chopped garlic. I gave the garlic a “rough chop,” rather than mincing it as that takes too much time. I covered everything with water, put the top on and set it to high.

I dropped off my son and school and went on about my day. This particular day I came home early and checked how everything was doing, it was perfect.


I put the lid back on and it continued to cook. By the time 5pm came, our red beans and rice cooked perfectly. We sat down to eat around 5:30pm and had more Mother and Son time, which I really value seeing that I have a Tween now.

  • Red Kidney Beans
  • Brown Rice
  • Chopped Onions
  • Chili Ancho Powder
  • Cumin
  • Turmeric
  • Sea Salt
  • Black Pepper
